Today I embarked on a new project with the help of my friend (and trainer), Lisa McDonald. She inspired me to cook in bulk to try to minimize my preparation needed each night for dinner. This is an excellent idea for most women I know who want to cook, but lack the time (and energy) to prepare. She was the expert and was nice enough to plan the menu, make up the grocery list and even help me with the execution. Love that girl!!
So we made....
- Turkey Chili (Deer Valley's recipe that I LOVED on my trip)
- Turkey Meatballs
- homemade Marinara
- Chicken Marsala
- Mustard Chicken
- Chicken Parmigian
- Lasagna
WOW! It took us from 8:30 until 4 pm but now I think that I have enough food for almost a MONTH of dinners for Randy and me. If you think you are interested in this type of project, let me know and I'll keep you posted on how I like it. I'll try everything first before posting the recipes to let you know which are the most successful.
The most important part of this is the special FOOD SAVER device that Lisa brought over. It is a handy machine that seals the food airtight to allow it to freeze better and will also allow for easy defrosting. Above you can see a sampling of each of the meals which are just the right amount for the 2 of us each night.
